Your gut will adore this healthy mixed green salad recipe with vegan Ranch dressing. It packs protein, fiber, antioxidants, and more.

This delicious mixed green salad recipe with vegan Ranch dressing is nutrient-dense. It rocks boatloads of phytochemicals and antioxidants.

In fact studies have shown that green leafy vegetables are among the healthiest foods on Earth. Each daily serving curbs disease and boosts longevity:

“Dark-green, leafy vegetables are the healthiest foods on the planet, which is why I recommend two servings each day,” says Dr. Michael Greger. “As whole foods go, they offer the most nutrition per calorie.”

Salad Benefits

  • Salads are one of the best ways to incorporate a variety of mixed greens.
  • Chlorophyll and other phytochemicals are native in green leaves, including saponins in spinach leaves.
  • Salads are a great way to load sprouts and microgreens. They blend well and stack.
  • Salads are typically raw and packed with heat-sensitive nutrients.
  • Salads rock fiber, key to biome health.
  • Salads are great with nuts, seeds, beans, and fruit—more powerful nutrients.
  • Salads support a healthy weight.
  • Salads are a great host for nutrient-dense dressings.
  • Mixed green salads are naturally hydrating.
  • Salads rock enzymes and polyphenols.
  • Salads are a great way to tap tons of nutrients in a single meal.
  • Salads are alkalizing.

Adding nuts, seeds, and legumes to mixed green salads boosts protein, fiber, and more.

Organic hemp, acai, chia, pumpkin, and sunflower seeds are loaded. Chia packs over 4.5 grams of protein and 5 grams of omega-3s per ounce, and like hemp it rocks all nine essential amino acids.

It’s also worth noting that the calcium in greens is more bioavailable than in cow’s milk. And all those rich phytochemicals curb heart disease, diabetes, and more.

One of my favorite salad dressings for this recipe is vegan Ranch. You can find it here

I also rock homemade garlic croutons made with buckwheat sourdough bread.
