Vegan Pizza with Himalayan Tartary Buckwheat Crust

Pizza Dough

  • Combine the yeast and water in a bowl of lukewarm water and let stand about 5 minutes.
  • Add the additional ingredients and mix.
  • Knead until smooth, form into a ball, then transfer to an oiled bowl, flipping to coat both side.
  • Cover with a kitchen cloth and let rise in a warm place until doubled (about two hours).

Pizza Sauce

  • Saute any vegan proteins like plant-based sausage in olive oil.
  • Add the fresh veggies, herbs, and cook until tender but firm.
  • Add the tomato sauces/paste and simmer for 15 minutes, adding the rest of the ingredients last.
  • Season to taste.
  • Cool or refrigerate before adding to pizza dough.

Baking

  • After preparing the pizza dough and sauce, preheat oven to 400.
  • Grease and lightly dust a large pizza pan (about 24”) with organic cornmeal, or two pans (12” x 2) if you want thinner crusts. If you’re using a stone, preheat per its instructions (or about 45 minutes).
  • Stretch the dough onto the pan (s).
  • Create lips on the dough and lightly brush with olive oil, salt and pepper, a sprinkling of Italian herbs, and nutritional yeast.
  • You can also sprinkle vegan cheese or vegan dry Parmesan directly onto the dough before adding the sauce, as well as any other ingredients for a thicker layer.
  • Lightly push dents into the dough with your fingers or a spoon to minimize bubbling.
  • Precook the dough for 5-10 minutes and set aside for another 10 minutes.
  • Dress the dough with sauce, vegan cheese, toppings, and bake for 10-15 minutes until the cheese is melted and the crust golden brown.
  • Remove from oven, cool for a few minutes, then slice with a wheel.
  • Sprinkle with vegan Parmesan, nutritional yeast, chili pepper flakes, and Italian seasonings
