Though you may not be a fan of keeping the peels on foods like apples and potatoes, it pays off bigtime when it comes to nutrients.
The pectin and polyphenols in apples are concentrated in their peels—two to five times more phenolic compounds. So if you do peel them, put them to use.
The best apples for pies, tarts, and breads are Honeycrisp, Golden Delicious, Braeburn, Granny Smith, Jonathan/Jonagold, Rome, and Northern Spy. Or better yet, straight off a tree!

Vegan Himalayan Tartary Buckwheat Apple Bread
Equipment
Ingredients
- 1/2 cups organic flour.
- 1/2 cup HTB flour.
- 1 cup plant milk.
- 2 chia eggs.
- 2/3 cup date sugar.
- 8 tbsp vegan butter.
- 1 tsp vanilla extract.
- 1 tbsp baking powder.
- 3/4 tsp pink salt.
- 3/4 cup walnuts. (optional)
- 1 1/2 cups chopped apples.
Cinnamon Glaze
- 1 cup organic powdered sugar.
- 2 tbsp vegan butter. (softened)
- 1 1/2 tbsp vegan cream.
- 2 tbsp plant milk.
- 1/2 tsp vanilla extract.
- 1 tsp pumpkin pie spice.
- 1/2 tsp pink salt.
Instructions
- Preheat oven to 350 and set the center rack.
- Chop unpeeled apples into tiny cubes and spice them with dashes of salt, pumpkin pie spice, and stevia.
- Soften or lightly melt vegan butter.
- Combine the flour, baking powder, salt, and spice in a large bowl.
- In a separate bowl whisk the chia eggs, plant milk, sugar, vegan butter, and vanilla.
- Combine them without overmixing—only until moistened, not smooth.
- Fold in the apples.
- Add the batter to a loaf pan and spread evenly.
- Sprinkle with a mix of date sugar and cinnamon spice or cinnamon glaze.
- Bake for 45 minutes to an hour or until a toothpick inserted into the center pulls out dry. Careful not to overcook.
- Let cool a few minutes before glazing and removing from pan.
- Serve immediately plain or with preferred toppings.
- Can store at room temp for several days in paper and airtight container.
- After that refrigerate.
Cinnamon Glaze
- Beginning with the powdered sugar, butter, and cream, beat or whisk in a bowl. Add the remaining ingredients and blend until smooth, adjusting consistency with either sugar or filtered water.
