This delicious vegan apple bread with cinnamon glaze is a treat. Made without gluten it rocks Himalayan Tartary Buckwheat, omega-rich walnuts, vegan chia eggs, and gut-healthy spice.

One of the key things about preparing healthy home cooked foods is finding the perfect balance between delicious and nutrient-dense, which is easy to do when you hand select every ingredient.

Take apples, for instance, and especially in their peels. They’re packed with nutrients like quercetin, catechin, phloridzin, and chlorogenic acid.

And Tartary Buckwheat (HTB), a powerhouse fruit seed with over four bioactive constituents—rutin, quercetin, luteolin, and hesperidin.

And then there are walnuts—the healthiest nut ever according to one report—and heart-healthy cinnamon, packed with beta-carotene. Not to mention HTB is a complete protein with all nine essential amino acids, so when it comes to the ingredients in this recipe, they’re stacked.

All organic, vegan, and gluten-free.

Vegan apple bread is delicious.

Though you may not be a fan of keeping the peels on foods like apples and potatoes, it pays off bigtime when it comes to nutrients.

The pectin and polyphenols in apples are concentrated in their peels—two to five times more phenolic compounds. So if you do peel them, put them to use.

The best apples for pies, tarts, and breads are Honeycrisp, Golden Delicious, Braeburn, Granny Smith, Jonathan/Jonagold, Rome, and Northern Spy. Or better yet, straight off a tree!

How to make a chia egg.

To make one chia egg mix one tablespoon of ground or soaked whole organic chia seed with three tablespoons of filtered water, wait for 10 minutes, mix again, then use.

Vegan egg substitutes are widely available, but chia is healthiest. It’s a complete vegan protein with all nine essential amino acids. Go to full recipe here.

And by the way I typically blend Himalayan Tartary Buckwheat with other flours like sorghumalmondmillet, and bean.

To make the glaze sugar-free, substitute stevia powder and adjust liquid.

Instructions

  • Preheat oven to 350 and set the center rack.
  • Chop unpeeled apples into tiny cubes and spice them with dashes of salt, pumpkin pie spice, and stevia.
  • Soften or lightly melt vegan butter.
  • Combine the flour, baking powder, salt, and spice in a large bowl.
  • In a separate bowl whisk the chia eggs, plant milk, sugar, vegan butter, and vanilla.
  • Combine them without overmixing—only until moistened, not smooth.
  • Fold in the apples.
  • Add the batter to a loaf pan and spread evenly.
  • Sprinkle with a mix of date sugar and cinnamon spice or cinnamon glaze.
  • Bake for 45 minutes to an hour or until a toothpick inserted into the center pulls out dry. Careful not to overcook.
  • Let cool a few minutes before glazing and removing from pan.
  • Serve immediately plain or with preferred toppings.
  • Can store at room temp for several days in paper and airtight container.
  • After that refrigerate.

Cinnamon Glaze

  • Beginning with the powdered sugar, butter, and cream, beat or whisk in a bowl. Add the remaining ingredients and blend until smooth, adjusting consistency with either sugar or filtered water.
