If you’re anything like me and adore the rich crispy taste of buttery croutons, you’re going to love this vegan croutons recipe made with Himalayan Tartary Buckwheat sourdough bread. It packs more flavor and nutrients than prepackaged croutons hands down.

That’s because Tartary, also known as HTB, is an exceptional seed. Long a mainstay of Asia and other parts of the world, it was developed here in the US after Dr. Jeffrey Bland and other scientists learned how nutrient-dense it is.

It rocks four bioactive compounds—rutin, quercetin, luteolin, and hesperidin—and a powerhouse free-radical scavenger that’s considered pretty rare (2-HOBA). It also stacks vitamins, minerals, protein, fiber, and immense prebiotics for your gut.

Vegan Garlic Croutons Recipe

I’m a huge fan of sourdough bread these because it’s super healthy. It’s also the most delicious when it comes to homemade fermented breads.

Not to mention, once you get the starter going, you can keep it going for months.

Instructions

  • Preheat the oven on 375.
  • Slice the bread into cubes.
  • Chop the garlic cloves.
  • Saute the olive oil, Earth Balance, herbs, and garlic in saucepan on low only until butter is melted.
  • Spread the bread evenly on large pan with parchment paper or directly on a pan.
  • Baste generously with the sauce.
  • Bake until crispy but still tender for 15-20 minutes.
  • Sprinkle with nutritional yeast and fresh minced garlic when cooled.

Notes

Placing the croutons directly on a seasoned cast iron skillet is my go-to. The sauce and herbs flavor the pan for something afterwards.
