Vegan buckwheat brownies with Himalayan Tartary and almond flour are easy to make. They’re the healthiest, too, with prebiotics, probiotics, protein, and fiber.

Even those of us that don’t do a lot of sugary treats break down every now and again, but if you do—when you do—rock a shameless cheat.

Like these ultra-rich vegan buckwheat chocolate brownies made with Himalayan Tartary Buckwheat, almond flour, and protein-rich chia seeds, which, by the way, pack all nine essential amino acids.

On top of that, Himalayan Tartary Buckwheat is also a complete protein, and that’s in addition to being one of the healthiest plants on earth. It rocks vitamins, minerals, prebiotics, probiotics, and over four bioactive compounds, so it’s hard to beat.

And we all know, or should anyway, that cacao is a powerhouse. Toss some walnuts in—Dr. Greger calls them the healthiest nut—and you’ve got an OG sweet.

And besides, I’m a sucker for chocolate every day of the week anyway, so this recipe is memorized! I also put the notes for easy cacao frosting below.

Another fun fact about this recipe is that date sugar is one of the healthiest sweeteners. I typically use stevia, but for some recipes date sugar rocks.

Dr. Michael Greger says it’s one of the “only two health-promoting caloric sweeteners,” including blackstrap molasses.

There are tons of nuts you can add to brownies, but walnuts are one of the healthiest.

“Which nut is healthiest? Normally, my answer is whichever you’ll eat regularly, but walnuts really do seem to take the lead. They have among the highest antioxidant and omega-3 levels, and beat out other nuts in vitro in terms of suppressing cancer cell growth.”

How to Make a Chia Egg

To make one chia egg mix 1 tablespoon of ground or soaked whole organic chia seed with 3 tablespoons of filtered water, wait for 10 minutes, mix again, then use.

Vegan egg substitutes are widely available, but chia is healthiest. It’s a complete vegan protein with all nine essential amino acids.

Ingredients
  

Cacao Frosting

Instructions
 

  • Preheat oven on 350 and grease or lay parchment paper in pan.
  • In a saucepan thoroughly mix the butter, sugar, and cacao on medium heat until the butter's melted and it's smooth.
  • Remove from heat and stir in chia eggs and vanilla.
  • In a separate bowl mix the flours, baking powder, and baking soda, then add with the milk to the cacao mix, alternating each in slowly and beating until smooth.
  • Stir in the nuts and pour batter into the baking pan, cooking for 15-25 minutes until a toothpick inserted into the middle comes out smooth.
  • Cool for 1-2 hours before cutting into bars.

Cacao Frosting

  • Mix the powdered sugar and cacao then add softened butter, vanilla, and boiling filtered water.
  • Beat with electric mixer on medium until smooth then let sit until cooled before spreading.

Notes

Organic cocoa powder can be subbed for cacao if you prefer it.
