I’m a huge fan of stacking nutrients, which is exactly why I make this delicious vegan pesto recipe with all organic ingredients. Studies show that organics are not only cleaner—do we really need excess chemicals in our food?—they pack more vitamins, minerals, flavanols, and diverse antioxidants.

Another great thing about organic pesto is it’s packed with nutrients. They’re also raw, so your body taps way more chlorophyll and antioxidants from living plants.

The garlic in this recipe fights “cancers of the breast, brain, lung, pancreas, prostate, and stomach.” It’s also a natural antibiotic with medicinal properties.

The pine nuts rock protein, iron, fiber, vitamins E, K, and B, magnesium, copper, zinc, and phenols. They boost heart-health, gut-heart, brain-health, skin-health, and more.

  • Process to a coarse paste in food processor or strong blender:
  • Fresh organic basil leaves.
  • Organic pine nuts.
  • Garlic (peeled and chopped).
  • Vegan cheese.
  • Slowly add in olive oil and spice, blending to taste. If it's too thick you can add a smidgen of water or more oil. Refrigerate or freeze.

Notes

Pesto can be frozen for up to a year.
