The juicy plant-based sausage in this casserole adds a savory touch, while the veggies and sourdough croutons are a perfect medley.
You can also use any kind of croutons you want, but I’m personally a fan of Himalayan Tartary Buckwheat sourdough bread, which I bake homemade and cut into croutons.

- Olive oil.
- Pink salt.
- Black pepper.
- Fresh garlic.
- Garlic powder.
- Italian seasoning.
- Nutritional yeast.
- Grains of Paradise.

Packed with protein, fiber, calcium, magnesium, potassium, folate, peptides, prebiotics, and more, they’re a bioactive win.
They also help offset disease and nourish the gut.
Another epic thing about this casserole is it’s oodles healthier than non-vegan meals.

Vegan Stuffing Sausage Casserole

Ingredients
- 8 cups vegan stuffing.
- 1 pack vegan sausage.
- 1 cup vegan cheese.
- 1 cup croutons. (crushed)
- 2 tbsp garlic (chopped)
- 3 tbsp Italian herbs.
- 1 tbsp garlic powder.
- 2 tbsp extra virgin olive oil.
- 3 tbsp vegan butter.
- 1 tsp pink salt.
- 1 tsp black pepper.
- 1 tsp grains of paradise.
- 2 tbsp nutritional yeast.
Instructions
- Preheat oven to 375, then cut the sausage into small cubes and sauté in a splash of olive oil, butter, and Italian seasoning until golden. For spicy add some jalapeno or cayenne.
- Whisk in the premade stuffing (recipe linked) and spread the whole mixture evenly in a baking pan.
- In a saucepan, melt some butter with olive oil, garlic powder, Italian seasoning, pink salt, pepper, and Grains of Paradise. Crush the croutons and layer them over the top of the casserole.
- Baste the crouton layer with the butter mix, layer again with cheese, then baste again with the rest.
- Bake for 15-20 minutes until the cheese is golden and crispy, then serve right away with fresh cut garlic and nutritional yeast on top. Garnish with fresh organic parsley sprigs.
